Corn and Pea Fritters with Cilantro Lime Dipping Sauce

Serves 2 (2 fritters per serving)
Corn and Pea Fritters
Combine Libby’s® Whole Kernel Sweet Corn, Libby’s® Sweet Peas, onion, flower, cheese, egg, salt and pepper in large bowl. Mix to combine.
Lightly coat sauté pan, turned on medium heat, with vegetable oil. Spoon ¼ cup of mixture on pan, press to flatten. Cook each fritter for 2-3 minutes on each side or until golden brown.
Cilantro Lime Dip
Combined Greek yogurt, avocado, lime juice, jalapeno and cilantro leaves in a food processor and process until smooth.
