Description

Vienna sausages and rice combined with corn, black beans, onion and chipotle pepper for a zesty skillet dish

Ingredients

  • c long-grain white rice, uncooked
  • cn (15 oz) Libby's® Whole Kernel Corn, drained
  • cn (15 oz) Libby's® Organic Black Beans, drained, rinsed
  • 1⁄2 c frozen chopped onion
  • T finely chopped chipotle pepper in adobo sauce
  • t garlic salt
  • c water
  • cn (5 oz each) Libby's® Vienna Sausages
  • T chopped fresh cilantro

Instructions

1. Combine rice, corn, beans, onion, chipotle pepper, garlic salt and water in large saucepan; bring to a boil over medium-high heat. Reduce heat to medium-low; cover and simmer 15 minutes or until rice is tender.

2. Meanwhile, drain sausages and cut into bite-size pieces. When rice is done, reduce heat to low. Stir in sausages and cilantro; heat 5 minutes or until hot.
