Description
Vienna sausages and rice combined with corn, black beans, onion and chipotle pepper for a zesty skillet dish
Ingredients
- 1 c long-grain white rice, uncooked
- 1 cn (15 oz) Libby's® Whole Kernel Corn, drained
- 1 cn (15 oz) Libby's® Organic Black Beans, drained, rinsed
- 1⁄2 c frozen chopped onion
- 1 T finely chopped chipotle pepper in adobo sauce
- 1 t garlic salt
- 2 c water
- 2 cn (5 oz each) Libby's® Vienna Sausages
- 3 T chopped fresh cilantro

Instructions
1. Combine rice, corn, beans, onion, chipotle pepper, garlic salt and water in large saucepan; bring to a boil over medium-high heat. Reduce heat to medium-low; cover and simmer 15 minutes or until rice is tender.
2. Meanwhile, drain sausages and cut into bite-size pieces. When rice is done, reduce heat to low. Stir in sausages and cilantro; heat 5 minutes or until hot.
