Sweet Pea Dip/Sandwich Spread

Ingredients

  • 1 can (15 oz.) Libby's Sweet Peas, drained

  • 1 tablespoon water

  • 2 tablespoons lemon juice

  • 1/4 teaspoon salt

  • 1/8 teaspoon black pepper

  • 10 fresh mint leaves

  • 2 teaspoons olive oil

Instructions

1. Place peas, water and lemon juice in food processor; pulse 5 times or until chopped. Add salt, pepper, mint and oil; pulse about 5 more times until mixed. (For best texture, do not puree.) Serve as a dip or sandwich spread.
