Spicy Sweet Pea Bisque

In less than 15 minutes, you can whip up a pot of this creamy, nutritious sweet pea soup! Serve with grilled cheese or add in cooked chicken and brown rice for a hearty one-pot meal. If you like your soup extra spicy, add a few dashes of cayenne pepper. 

Makes 4 servings

Ingredients
1 tbsp unsalted butter
2 garlic cloves minced
2 can (15 oz.) Libby’s® Naturals Sweet Peas drained and rinsed well
2 c low sodium vegetable broth
3⁄4 tsp chili powder
1⁄4 tsp black pepper
1⁄8 tsp salt
1 c low-fat buttermilk
1 sli bacon crumbled
1⁄4 c nonfat greek yogurt
Instructions

In a medium pot over medium heat, melt butter. Add garlic and sauté for 1 minute. Add peas, stir and cook for another minute. Add in broth, chili powder, black pepper and salt; bring to a boil. Reduce to a low simmer for 2 minutes then slowly mix in buttermilk. Simmer for another 2 minutes and then remove from stove.

To puree soup, carefully add to blender or food processor (or use immersion blender directly in pot.) Return pureed soup to pot and heat for a few minutes until soup is warm enough to serve.

Pour 1¼ cups of soup into each of four bowls. Top each bowl with 1 tablespoon of Greek yogurt and one-fourth of the crumbled bacon.
