Salmon and Dill Green Bean Salad

This flavorful salad makes for a delicious light meal during the summer. If you prefer, you can use canned salmon instead of cooking your own, or add in another vegetable like Libby’s® Sweet Peas or Libby’s® Whole Kernel Sweet Corn.

Serves 6

 

Ingredients
1 1⁄2 lb pounds cooked salmon flaked
1⁄4 c cup fresh dill chopped
1⁄2 small red onion diced
3 tbsp extra-virgin olive oil
2 tbsp balsamic vinegar
2 tbsp fresh lemon juice
1⁄4 tsp black pepper
1⁄4 tsp salt
Instructions

In a large bowl, add all ingredients and gently toss together until well mixed. Serve with a whole grain like brown rice, whole wheat couscous or pumpernickel bread.
