Pear & Colby Panini

Pears are a delicious addition to grilled cheese in this panini recipe featuring Colby, baby spinach, pecans and a honey Dijon spread. Simple enough for your weekday lunch yet elegant enough for a festive brunch!
- 1 cn Libby’s® Pear Slices (in heavy syrup or pear juice concentrate), drained and patted dry
- 12 sli whole grain bread
- 6 sli slices Colby cheese
- 1 c baby spinach leaves
- 6 T pecan halves
- 1⁄4 c dijon mustard
- 1 T honey
- 6 t Unsalted butter
Slice pears into ½-inch strips.
To assemble sandwiches, start with one slice of bread. Add one slice of cheese and place 3 -4 pear strips on top. Next, add a few spinach leaves and top with 1 tablespoon of pecans.
In a small bowl, whisk together mustard and honey. Spread about 2 teaspoons honey mustard on another slice of bread and place on top of pecans to complete the sandwich.
Preheat your grill, griddle or panini maker to medium (or use a frying pan over medium heat.) Melt 1 teaspoon butter, then add sandwich and cover with lid (or place another small frying pan on top of sandwich while cooking to weigh it down.)
Cook for about 5 minutes or until bread starts to get golden brown and cheese is melted (if using a frying pan, cook for 3 minutes on one side then flip and cook an additional 2 – 3 minutes.) Remove from pan. Repeat with remaining ingredients to make a total of 6 sandwiches.
