Mexacali Turkey on a Bun
Ingredients
- 1 tablespoon vegetable oil
- 2⁄3 cup chopped onion
- 1⁄3 cup finely diced red pepper
- 1 1⁄2 teaspoons ground cumin
- 1 pound ground turkey
- 1 1⁄4 cups prepared mild tomato salsa
- 1 can (15 oz) Libby's organic dark red kidney beans, rinsed and drained
- 3⁄4 cup (3 oz) shredded monterey jack cheese
- 6 whole wheat hamburger buns, split and toasted
Instructions
Heat oil in a large nonstick skillet over medium heat. Add onion and bell pepper; sauté 5-6 minutes or until onion is translucent. Mix in cumin; cook and stir 2 minutes. Add turkey; cook, stirring occasionally to break up turkey, about 6 minutes or until turkey is lightly browned and cooked through. Mix in salsa and beans; cook and stir until hot throughout. Mix in cheese. Sandwich turkey mixture between bun halves dividing equally. Serve hot.
