French Style Potato Salad

Description
The classic Niçoise salad flavors of lemon, olive and garlic combine with the convenience of Libby’s canned vegetables to produce a fresh side for picnics.. Variation: make it a simple main dish salad by adding tuna or Libby’s Organic Garbanzo Beans.
Ingredients
- 2 cn 15oz can Libby’s® Sliced Potatoes, drained
- 1 cn 14.5oz can Libby’s® Naturals French Style Green Beans, drained and rinsed
- 1⁄3 c pitted niçoise or black olives, roughly chopped
- 1 T cider vinegar
- 1 T fresh lemon juice
- 1 T olive oil
- 1 T dijon mustard
- 1⁄4 T salt
- 2 T chopped fresh parsley
- 1 clv garlic, minced
- freshly ground black pepper
Instructions
Gently combine potatoes, beans and olives in a serving bowl.
Combine vinegar, lemon juice, olive oil, mustard and salt in a small bowl; stir with a whisk. Stir in parsley and garlic; season to taste with black pepper. Pour over potato mixture and toss to combine. Serve immediately or store in refrigerator until serving.
