Easy Pickled Beets

1 c apple cider vinegar
1⁄2 c sugar
1⁄2 tsp salt
1 tsp peppercorns
3 bay leaves

Open Libby's® Sliced Beets, drain the juice and add beets to mason jar. Set aside.

Add the apple cider vinegar, sugar, salt, peppercorns and bay leaves to small saucepan. Bring to a boil; then cook for five minutes. Remove from heat and pour vinegar mixture over beets. Place lid on jar of beets and refrigerate.

Let jar sit in refrigerator at least overnight. For optimal flavor, refrigerate for 5 days before eating. Store sealed in refrigerator for up to 2 months.
