    <directions>Preheat oven to 350°F. In large mixing bowl, mix ground beef, bread crumbs, onion, garlic, salt, pepper and eggs. Add peas and carrots; mix well. Place mixture in 9x13–inch baking dish and shape into a loaf. Bake 30 minutes. Spoon diced tomatoes over top of meatloaf and bake an extra 30 minutes. Let stand for at least 5 minutes before serving.</directions>
