Vegetable Sausage Soup

Ingredients

  • 1 (14.5 oz.) can Libby’s® cut green beans, drained
  • 1 (14.5 oz.) can Libby’s® sliced carrots, drained
  • 1 (15 oz.) can Libby’s® whole potatoes, drained and diced
  • 1 lb hot or sweet italian sausage
  • 1 cup green peppers, diced
  • 1 cup onions, diced
  • 1⁄2 tsp dried basil
  • 1⁄2 tsp dried oregano
  • 1⁄2 tsp ground marjoram
  • Salt and pepper to taste
  • 2 (14 oz.) cans chicken broth
  • 2 (14.5 oz.) cans stewed tomatoes
  • parmesan cheese (optional)

Instructions

Remove sausage from casing and place in large pan; add onion, green pepper, and spices. Cook over medium heat until thoroughly cooked; breaking sausage up with a spoon into small bite-sized chunks. Add chicken broth and stewed tomatoes (breaking up tomatoes into small chunks). Add cut green beans, sliced carrots, and potatoes; bring to boil. Reduce heat to low and simmer for 15 minutes, stirring occasionally. Spoon soup into bowls and top with Parmesan cheese, if desired.
