Baked Succotash

Ingredients

  • 1 cn Libby’s® Succotash (15.25 oz.), undrained
  • 1 cn Evaporated milk (12 oz.)
  • 1 c Monterey Jack cheese, shredded
  • 2 Eggs, beaten
  • 1⁄4 c Onion, diced
  • 1⁄4 c Red bell pepper, diced
  • 1⁄4 tsp Ground pepper
  • 1⁄2 c Saltine crackers, crumbled
  • 1⁄4 c Bread crumbs

Instructions

In large bowl, combine succotash, evaporated milk, cheese, eggs, onion, bell pepper, pepper and crackers. Place in 2-qt. casserole dish; sprinkle bread crumbs over mixture. Bake at 350° F for 50-60 minutes. Let stand 5 minutes before serving.
