Tex-Mex Salad

Ingredients

  • cn Libby’s® Organic Black Beans (15 oz.), rinsed and drained
  • cn Libby’s® Organic Garbanzo Beans (15 oz.), drained
  • cn Whole kernel corn (15.25 oz.), drained
  • 1⁄2 c Onion, finely diced
  • tbsp chopped fresh cilantro
  • c Red bell pepper, diced
  •   Jalapeno peppers, seeded & finely chopped
  • 1⁄4 c olive oil
  • tbsp Lime juice
  • tsp ground black pepper
  •     Salt to taste

Instructions

In large bowl, combine all ingredients and mix well. Refrigerate for 2 hours to allow flavors to blend.
