Baked Lima Beans

Ingredients

  • 1 can (15 oz.) Libby's Lima Beans, drained

  • 1 can (12 oz.) evaporated milk

  • 1 cup shredded Monterey Jack cheese

  • 2 eggs, beaten

  • 1/4 cup diced onion

  • 1/4 cup diced red bell pepper

  • 1/4 cup black pepper

  • 1/2 cup crushed saltine crackers

  • 1/4 cup seasoned breadcrumbs

Instructions

1. In large bowl, combine limas, evaporated milk, cheese, eggs, onion, bell pepper, pepper and crackers. Place in 2-quart casserole dish; sprinkle bread crumbs over mixture.

2. Bake at 350°F for 25 minutes. Let stand 5 minutes before serving.
