These waffles have a thin, crisp texture on the outside and a soft, cake-like feel inside. The best part is the taste of sweet peaches in every bite. It's springtime and with nicer weather comes a lot of celebrations and gatherings. While my girlfriends do a lot of happy hours and evening get-togethers, with a packed work and family schedule, my evenings are busy. But a good weekend morning gathering? Sign me up!

These are legit. The batter is thicker than a traditional waffle, which is why I will remind you that the texture is cake-like. But you need a sturdy waffle texture to hold the sweet pieces of canned peaches inside. Not to mention, to be able to handle a simple syrup like the peach one I recommend serving on the side.
I love to use Libby's® canned fruit in my baked goods, like I shared with you in these Pear Crumble Muffins, because they have a softer texture that doesn't need to cook a long time. Other canned fruit, like peaches, work wonderfully with waffle batter! Nobody wants to bite into a delicious waffle with an uncooked piece of fruit, you know?
These Peaches and Cream Waffles with my Homemade Peach Syrup wow my guests and family every time I make them. Speaking of the syrup, if you watched the video, you saw that it's nothing more than the canned peaches and a bit of the fruit juice blended until smooth. Super easy to make and the sweet peach flavor shines through.
Of course, I've made these waffles many times, and I like to double my batter and make extras to freeze. Simply place your waffles on a parchment lined baking sheet, freeze them, and transfer them to a zip bag. To enjoy them again, I simply toast them for a few minutes, and they are ready!
To keep these warm and while I get the table set up or wait for friends to arrive for brunch, I place them in my oven at 200F to keep warm directly on the rack. So easy, right? One thing is for certain, my waffle maker gets a great workout with this recipe. "Keep them coming!" are words I hear often. Maybe it's their amazing taste or the drizzle of warm homemade peach syrup... it's probably all the things!
1 cup whole milk
1 cup plain Greek yogurt or sour cream
3 tablespoons butter, melted
1 teaspoon vanilla
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon
Pinch kosher salt
1 15 ounce can Libby's Peach Slices in 100% Fruit Juice, drained
8 ounces heavy whipping cream
For the Peachy Syrup:
15 ounce can Libby’s Peach Slices, drained, liquid reserved
Heat waffle iron.
In a bowl (or blender), whisk the milk, Greek yogurt or sour cream, eggs, melted butter, and vanilla.
In a large bowl, combine the all-purpose flour, baking powder, baking soda, cinnamon, and a pinch of salt.
Form a well in the center and add the wet mixture to the dry to form a smooth your batter.
Chop peach slices into small pieces to fill 1/2 to 3/4 cup and save remaining slices for topping. Add chopped peaches into the batter and mix to combine.
When iron is hot, spray lightly with non-stick spray (if necessary). Fill your waffle iron with enough batter to fill the cavity (this will vary by waffle iron) and cook until a golden brown crust forms.
While waffles are cooking, add reserved peaches and the peaches from the second can into the blender. Add about 1/4 cup of the fruit juice to the blender and blend until smooth. For a thinner syrup, add additional fruit juice. Transfer syrup into a small sauce pan and heat on low.
Whip heavy whipping cream until stiff peaks form.
Serve waffles warm, topped with whipped cream and peach syrup.
