Mediterranean Meatloaf

Ingredients

  • 1 cn (8.5 oz.) Libby’s® Peas & Carrots, drained
  • 1 cn (14.5 oz.) Diced tomatoes with onion and herbs
  • 1 1⁄2 lb Ground beef
  • 2⁄3 c Prepared Italian–seasoned bread crumbs
  • 2⁄3 c Red onion, chopped
  • 3 Garlic cloves, minced
  • 1⁄2 tsp Salt
  • 1⁄2 tsp Pepper
  • 2 Eggs

Instructions

Preheat oven to 350°F. In large mixing bowl, mix ground beef, bread crumbs, onion, garlic, salt, pepper and eggs. Add peas and carrots; mix well. Place mixture in 9x13–inch baking dish and shape into a loaf. Bake 30 minutes. Spoon diced tomatoes over top of meatloaf and bake an extra 30 minutes. Let stand for at least 5 minutes before serving.
